Preparation procedure

  • For the dough: In a bowl mix the flour, sugar, margarine, egg yolks and a pinch of salt. Work into a smooth dough, moistening with a little milk if needed. Wrap in plastic wrap and let rest in the refrigerator.
  • Preparing the quark filling: Mix the quark with the sugar, vanilla pudding powder and sour cream. Finally add the egg yolk and mix everything thoroughly.
  • Assembling the cake: Roll out the dough on a floured surface and transfer it to a baking tray lined with parchment paper. Spread the quark filling evenly.
  • Baking: Bake in a preheated oven at 170 °C for 45–50 minutes.
  • Preparing the meringue layer: Meanwhile, whisk the egg whites with the sugar until stiff peaks form.
  • Finishing the cake: After the initial bake, spread the meringue on the cake, smooth it and return to the oven for another 10–15 minutes, until the meringue layer is lightly browned.
  • Cooling: While still hot, transfer the cake to a cooler environment so that beautiful caramel droplets form on the surface.
