Preparation procedure
- Preparing the dough: Cream the butter with the sugar until smooth. Add the eggs and sour cream and mix well until everything combines. Gradually add the flour mixed with the baking powder to the mixture and work into a semi-firm, non-sticky dough. Divide the dough into two parts: wrap 2/3 of the dough in plastic wrap and place in the refrigerator, put 1/3 of the dough into the freezer.
- Preparing the quark filling: Mix the quark with the egg white and sugar. Add the sour cream and corn starch. Mix everything into a smooth cream.
- Shaping the cake: Preheat the oven to 180 °C and line a baking sheet with parchment paper. Evenly press the larger portion of the dough (2/3) onto the bottom of the sheet and up its sides. Pour the prepared quark filling onto the dough and level it. Make a crumble from the smaller portion of dough (1/3): either grate it or cut it into thin slices (approx. 5 mm). Evenly distribute the crumble over the surface of the quark layer.
- Baking: Bake the cake in the preheated oven for approximately 35–40 minutes until golden. Let the baked cake cool and sprinkle with powdered sugar before serving.
