Preparation procedure

  • Dough preparation In a bowl, whip the softened butter with the sugar and egg yolks until fluffy. Add the cream cheese and lemon zest, mix everything well. Then gradually incorporate the flour with a pinch of salt and work into a smooth, elastic dough. Wrap the dough in plastic wrap and let it rest in the refrigerator for 30 minutes.
  • Filling preparation In a bowl, mix the egg whites with the sugar (just lightly with a fork is enough). Add the ground nuts and vanilla sugar. Divide the resulting mixture into small logs – they will serve as the filling for the rolls.
  • Shaping the rolls Roll the dough into a sheet 2–3 mm thick. Use a glass or cutter to make circles. Place a walnut log on each, fold the dough over from both sides and press lightly. Use a fork to create the characteristic stripes on the top.
  • Baking Transfer the rolls to a baking sheet lined with parchment paper. Brush them with sugar syrup (sugar dissolved in water) and bake in a preheated oven at 200 °C until golden – approximately 12–15 minutes. After cooling, you can lightly dust with powdered sugar.
