Preparation procedure

  • Preparing the batter Beat the egg yolks with the sugar and vanilla sugar until light and fluffy. Gradually add the milk and oil. In another bowl, mix the flour, cocoa and baking powder, then gradually add them to the yolk mixture. Whisk the egg whites into stiff peaks and gently fold them into the batter. Pour the mixture onto a greased and floured baking sheet.
  • Baking Bake the batter in a preheated oven at 180 °C for about 20–25 minutes. After baking, let it cool.
  • Preparing the quark cream Beat the quark with the powdered and vanilla sugar. Add the liquid cream and the whipped cream stabilizer. Spread the cream onto the cooled cake and chill in the refrigerator for 30 minutes to set.
  • Chocolate glaze In a water bath, melt the chocolate into the cream and, stirring occasionally, bring to a boil. Let it cool slightly so it remains pourable, and pour it evenly over the quark layer.
  • Finishing and serving Let the dessert set in the refrigerator, ideally overnight. Before serving, cut with a sharp serrated knife dipped in hot water.
