Preparation procedure

  • Preparing the pastry: Preheat the oven to 200 °C. If using frozen puff pastry, thaw it first. Roll the pastry on a floured surface to a thickness of about 5 mm. Place it on a baking sheet lined with parchment paper, prick with a fork and bake for 15 minutes, until golden and crisp. Let cool.
  • Preparing the vanilla cream: In a saucepan heat 400 ml of milk and add the vanilla bean (or vanilla extract). In the remaining 100 ml of milk whisk together the egg yolks, sugar and cornstarch into a smooth mixture. Gradually stir this mixture into the hot milk and cook over low heat, stirring constantly, until the cream thickens. Remove the vanilla bean and let the cream cool. Meanwhile whip the cream to stiff peaks and gently fold it into the cooled cream.
  • Finishing: Spread the cream filling evenly over the cooled puff pastry. Cover with the second sheet of puff pastry and press lightly. Chill the dessert in the refrigerator for at least 3 hours, ideally overnight. Before serving, dust with powdered sugar and cut into portions.
