Preparation procedure

  • Preparing the dough: In a bowl, mix the butter, powdered and vanilla sugar, yolks and baking powder with the sifted flour. Work into a smooth dough, wrap it in cling film and let it rest in the refrigerator for 2 hours.
  • Rolling out and preparing the base: Preheat the oven to 180 °C. Roll out the dough to the size of a baking sheet with a higher edge (25 × 35 cm), transfer to the sheet and pull up the edges. Prick the bottom and sides with a fork.
  • Preparing the quark filling: In a bowl, mix both quarks, the yolk, vanilla sugar, lemon zest, powdered sugar, rum and starch. Finally, gently fold in the whipped egg whites.
  • Assembling the tart: Spread the filling evenly over the base. Sprinkle with blueberries.
  • Crumb topping: From semi-coarse flour, butter and powdered sugar create the crumb topping “by eye” and sprinkle it over the entire surface of the tart.
  • Baking: Bake for 45 minutes in a preheated oven at 180 °C, until the crumb topping turns golden and the filling sets.
