An irresistible no-bake coconut dessert that will delight even the pickiest dessert lovers

Do you want to prepare a sweet dessert that will impress with its look and taste, but won’t take hours in the kitchen? This no-bake Raffaello cake is a great choice. Coconut flavor, a delicate cream and an airy whipped cream topping make it an elegant dessert for any occasion – a celebration, a holiday or Sunday coffee with the family.

Preparation procedure

  • Preparing the cream: Heat 700 ml of milk in a pot. In another bowl, mix 300 ml of milk with the sugar, vanilla sugar, coconut, flour, starch and egg yolks. Once the milk in the pot starts to boil, pour in the prepared mixture and, stirring constantly, cook until thickened. Remove from heat and let cool to room temperature. Whip the butter and gradually incorporate it into the cooled cream.
  • Preparing the topping: Whip the cream with the powdered sugar until stiff, add the mascarpone and chocolate flakes. Stir until smooth. Reserve a few tablespoons of the topping for final decoration.
  • Assembling the cake: Line a pan about 25×25 cm in size with baking paper. Spread a layer of biscuits on the bottom. Spread with the coconut cream and repeat the layers according to the size of the pan. Spread the whipped topping over the cream layer and smooth.
  • Finishing: Decorate the cake with the remaining topping, Raffaello balls and chocolate shavings. Let chill for at least 4 hours, ideally overnight.
