Ingredients

Eggs: 7 pcs

    Milk: 300 ml

      Vegetable broth: 300 ml

        Butter: 2 tablespoons

          Plain flour: 4 tablespoons

            Mustard (medium-spicy): 4 tablespoons

              Wine vinegar: 1.5 tablespoons

                Sugar: 1 teaspoon

                  Salt: a pinch

                    Pepper: a pinch

                      Whipping cream: 120 ml

                        Chopped parsley: 1 tablespoon

                        Preparation procedure

                        • Place the eggs in boiling water and cook for 4–5 minutes so they remain soft-boiled. Then quickly cool them in cold water, peel and set aside.
                        • For the sauce, melt the butter in a pot, add the flour and stir until it lightly browns – a roux will form.
                        • Gradually pour in the milk and vegetable broth, whisking well to prevent lumps. Cook over low heat for about 4 minutes, until the sauce starts to thicken.
                        • Add the mustard, vinegar, sugar, salt and pepper to the sauce. Then stir in the cream – do not cook further to prevent the cream from curdling.
                        • Cut the eggs in half and arrange them on plates. Pour the warm mustard sauce over them and garnish with chopped parsley.
                        • Serve with boiled potatoes or fresh bread.
