Preparation procedure

  • Preparing the batter In a bowl, mix the flour with the sugar and baking powder. Add the eggs, oil and milk, then whisk or beat with a mixer until you have a smooth, lump-free batter.
  • Filling the pan Preheat the oven to 180 °C (convection 160 °C). Line a large baking sheet (approx. 30 × 40 cm) with baking paper and pour the batter onto it evenly.
  • Preparing the vanilla pudding Sprinkle the vanilla pudding powder and vanilla sugar into 500 ml of milk. Bring to a boil while stirring constantly and cook until the pudding thickens.
  • Assembling the cake Pour the hot pudding evenly over the batter on the sheet. Top with halved apricots with the cut side up (or mandarin segments).
  • Baking Bake for 30 minutes until golden. After removing from the oven, let the cake cool for at least 10 minutes before cutting.
