Preparation procedure

  • Preparing the base Separate the egg whites and yolks. Add a pinch of salt and the water to the egg whites, whisk until foamy. Gradually add the sugar and vanilla sugar and beat until stiff, glossy peaks form. Beat the yolks with the oil and add to the egg whites. Gradually fold in the sifted flour mixed with the cocoa, baking powder and ground nuts. Gently mix and pour the batter into a cake pan (diameter approx. 28 cm) lined with baking paper. Bake for 30 minutes at 180 °C. Let cool completely.
  • Preparing the cream Mix the eggs with the sugar and milk and heat over a bain-marie. Stir until the mixture thickens. Remove from heat, add the rum and cocoa, stir and let cool. Meanwhile, beat the softened butter and gradually add the cooled cocoa mixture. A smooth cream will form.
  • Assembling the cake Cut the cake base into two layers. Drizzle the bottom layer with strong coffee, spread a layer of cream. Top with the other half, drizzle it with coffee again and coat the whole cake with the remaining cream.
  • Chocolate glaze Melt the dark chocolate and pour it evenly over the cake. Let it set and then refrigerate for at least 2–3 hours, ideally overnight.
