Ingredients

For the batter (2 sheets):

5 eggs
5 tablespoons granulated sugar
1 tablespoon oil
5 tablespoons all-purpose flour
4 tablespoons cocoa powder
3 teaspoons baking powder

For the buttercream:

600 ml milk
150 g all-purpose flour
7 egg yolks
150 g white chocolate
300 g powdered sugar
300 g butter
1 packet of vanilla sugar

For the egg-white filling:

7 egg whites
300 g powdered sugar

For the cocoa whipped cream:

250 ml whipping cream
1 packet of vanilla sugar
1 tablespoon cocoa powder
1 packet gelatin stabilizer

Preparation procedure

Preparing the batter: Beat the egg yolks with the sugar, add the oil and then fold in the flour, cocoa and baking powder. Gently fold the egg-white foam into the golden mixture. Pour the batter onto two baking sheets lined with parchment paper and bake at 180 °C for about 10-12 minutes. After baking, let the cake cool.
Preparation of the buttercream: Prepare a thick custard from the milk, flour, vanilla sugar and egg yolks. When the custard has cooled slightly, stir in the white chocolate and mix well. Beat the butter with the powdered sugar and then gradually add the cooled custard until a smooth cream forms.
Preparation of the egg-white filling: Make a meringue from the egg whites and sugar and whisk them over a double boiler until a firm mass forms.
Preparation of the cocoa whipped cream: Whip the cream with the vanilla sugar and cocoa until stiff. In another bowl, prepare the gelatin stabilizer with 100 ml of lukewarm water and stir it into the whipped cream.
Assembling the slices: Spread the yolk cream on the first sheet of cake, cover with the second sheet. Spread the egg-white filling on the second sheet and then add the cocoa whipped cream. Leave the dessert in the refrigerator for several hours to set well.
Finishing: You can dust the surface of the dessert with cocoa powder for a beautiful appearance.
