  • Preparing the tenderloin Trim the tenderloin of silverskin and cut into medallions 2–3 cm thick. Heat 1 tablespoon of oil in a pan and sear the medallions on one side for about 3–4 minutes. Turn, season with salt and pepper, and fry for another 3–4 minutes on the other side. Set the fried medallions aside.
  • Preparing the sauce Add another tablespoon of oil to the drippings and sauté the garlic and onion in the hot fat until golden brown. Add the carrot sliced into rounds and, stirring constantly, sauté until the onion softens. Add the bay leaf, deglaze with the white wine and stir occasionally until the alcohol evaporates. Add the stock, cover with a lid and let simmer until the vegetables are tender. Stir occasionally. Season with salt and pepper to taste. If you want a smoother sauce consistency, blend it with an immersion blender.
  • Combining flavors Place the seared tenderloin medallions into the sauce and let them simmer together over low heat for about 10 minutes.
