Ingredients

Dough:

6 eggs
6 tablespoons plain flour
3 tablespoons dark cocoa
2 tablespoons oil
2 tablespoons sparkling mineral water
6 tablespoons sugar
1 baking powder
1 teaspoon rum or vanilla essence

Yogurt cream:

250 ml plain yogurt (ideally Greek)
250 ml whipping cream
80 g vanilla powdered sugar
300 g fresh strawberries
10 g gelatin (powdered)

Chocolate glaze:

350 g dark cooking chocolate
10 g butter

Preparation procedure

Dough preparation: Separate the egg whites from the yolks. Whip the egg whites with a pinch of salt to stiff peaks. Beat the yolks with the sugar until foamy, add the oil and sparkling water. Fold in the flour mixed with the cocoa and baking powder. Finally add the essence and gently fold in the meringue. Spread the batter on a baking tray (24×34 cm) lined with baking paper and bake at 180 °C for about 25–30 minutes. After cooling, slice into two layers.
Yogurt cream: Whip the cream with the powdered sugar until firm. Fold in the yogurt and chopped strawberries. Prepare the gelatin according to the instructions and stir it into the cream. Mix gently but thoroughly.
Chocolate glaze: Melt the chocolate with the butter in a double boiler. Stir until a smooth mixture forms. Let it cool slightly.
Cake assembly: Spread all the yogurt cream onto the first cake layer. Place the second layer on top and press gently. Coat the surface with the chocolate glaze. Chill the cake in the refrigerator, ideally overnight.
