Preparation procedure

  • Into a larger bowl crack the egg, add the granulated sugar, vanilla sugar and a pinch of salt. Mix everything with a whisk until smooth.
  • Add the softened butter, kefir or sour cream and mix well again.
  • Then sift the flour with the baking powder into the mixture and knead a soft dough with your hands.
  • Cover the dough with a towel and let it rest for 10 minutes.
  • Meanwhile prepare the filling – in a bowl beat the quark, powdered sugar, all-purpose flour and egg white until smooth. Transfer the filling into a piping bag.
  • Divide the rested dough into two parts and roll out on a lightly floured surface into a sheet about 3 mm thick.
  • Using a round cutter (diameter approx. 9 cm) cut out circles.
  • On each circle pipe the quark filling from the edge toward the center using the piping bag.
  • Roll up the dough with the filling and press lightly in the middle with your finger.
  • Place the prepared rolls on a baking sheet lined with parchment paper. Brush them with the beaten yolk mixed with a little milk.
  • Bake in an oven preheated to 190 °C until golden (approximately 20 minutes).
  • Let the finished quark rolls cool and dust with powdered sugar.
