  • Preparing the vegetables: Finely chop the onion. Heat the oil in a pan and sauté the onion for about 2 minutes until golden. Peel the carrot, dice it and add to the onion. Add the crushed garlic and sauté for another 2 minutes.
  • Cooking the soup: Add the diced potatoes and briefly sauté. Pour in the chicken broth, season with salt, pepper and Provencal herbs. Stir and let simmer over low heat for 25–30 minutes, until the potatoes are tender.
  • Preparing the croutons: Meanwhile, in another pan melt the butter and fry the diced bread in it until golden.
  • Finishing the soup: Add the processed cream cheese to the finished soup and gently stir until it melts. Remove the soup from the heat.
  • Serving: Serve hot, garnished with fresh parsley and accompanied by crispy croutons.
