Preparation procedure

  • Preparing the dough In a large bowl, mix the flour, baking powder, sugar and a pinch of salt. Add the butter cut into pieces, the egg yolk and the sour cream. Work with your hands into a smooth and soft dough, wrap it in cling film and let it rest in the refrigerator for at least 20 minutes.
  • Preparing the apple filling Peel the apples, coarsely grate them and put them in a pot. Add a little sugar, cinnamon, water and let simmer briefly. Finally stir in the pudding powder and cook, stirring constantly, until the mixture thickens. If you want the filling even smoother, add a piece of butter.
  • Assembling the pie Divide the dough into two parts. Roll out the first half and transfer it onto a baking sheet lined with parchment paper. Spread the apple filling evenly over the dough, then cover with the second rolled-out piece of dough. Gently press the edges.
  • Baking Bake in a preheated oven at 180 °C for about 35–40 minutes, until the surface is golden. After cooling, you can lightly dust the pie with powdered sugar.
