Preparation procedure
- Preparing the dough Mix all ingredients for the dough except the flour. Add the flour gradually and work into a uniform, firmer dough. Divide it into two parts (2/3 and 1/3) and let it rest in the refrigerator for 30–40 minutes.
- Preparing the foam Whip the egg whites with the sugar into stiff peaks. Then gently fold in the corn starch.
- Assembling the cake Coarsely grate the larger portion of dough (2/3) and spread it on a baking sheet lined with parchment paper. Layer apple slices on the dough and sprinkle them with sugar and cinnamon. Spread the prepared egg white foam over the apples and finally sprinkle with the grated smaller portion of dough (1/3).
- Baking Place the cake into the preheated oven and bake at 190–200 °C for about 40–45 minutes, until the surface is golden. After baking, let the cake cool and sprinkle with powdered sugar.
