Preparation procedure

  • Work all the ingredients for the dough into a smooth, non-sticky dough. Divide it into two equal balls, wrap in plastic wrap and place in the fridge to rest for 20 minutes.
  • Put the quark into a bowl. If it is lumpy, briefly stir or mash it. Add sugar, vanilla sugar, lemon zest, sour cream, a pinch of salt and the egg yolks. Mix everything thoroughly into a smooth cream.
  • Whisk the egg whites to stiff peaks and gently fold them into the quark mixture so the cream remains airy.
  • Preheat the oven to 170 °C. Line a 25 × 37 cm baking sheet with baking paper. Roll out one portion of the dough and transfer it to the sheet. Sprinkle it evenly with breadcrumbs, which will prevent the filling from soaking through. Spread the quark filling on top. Roll out the second portion of dough and place it on the filling. Prick the surface in several places with a fork so that steam can escape during baking.
  • Brush the cake with the beaten egg and place it in the preheated oven. Bake for approximately 40 minutes until golden. After baking, let the cake cool so the filling firms up nicely.
