The cup-poured cake with quark and mandarins is one of those desserts that turn out well even without weighing and are ideal with coffee or as a quick sheet-pan dessert. Preparation procedure

  • Place the eggs, sugar, milk and oil into a large bowl. Mix briefly. Add the semi-coarse flour mixed with the baking powder and work into a smooth, semi-liquid batter.
  • Line a baking sheet with parchment paper or grease it and dust with flour. Pour the batter evenly onto the sheet.
  • In a bowl mix the quark, egg, powdered sugar and lemon zest. Use a teaspoon to drop spoonfuls of the quark mixture onto the batter.
  • Arrange the mandarins evenly over the surface and press them lightly into the batter.
  • Bake in a preheated oven at 180 °C for 20–25 minutes, until the surface is golden. After baking let the cake cool and sprinkle with powdered sugar before serving.
