Preparation procedure

  • Preparing the cream: Pour the milk into a saucepan, add the sugar, vanilla sugar, egg yolks and cornstarch. Mix everything thoroughly with a whisk. Cook, stirring constantly, until thickened. Transfer the finished cream into a bowl, cover with cling film and let cool.
  • Preparing the dough: Sift the flour into a bowl, add a pinch of salt and softened butter cut into pieces. Rub with your fingers until a crumb forms. Add the sour cream and work into a smooth, elastic dough. Wrap in a plastic bag and let rest for 30 minutes in the refrigerator.
  • Shaping the rolls: Roll the dough out on a floured surface to a sheet about 2 mm thick. Cut it into strips about 2 cm wide and wind them spirally onto metal molds.
  • Baking: Place the rolls on a baking sheet lined with parchment paper. Bake in a preheated oven at 200 °C until golden (about 12–15 minutes). After baking, let them cool slightly and carefully remove them from the molds.
  • Finishing the cream: Beat the butter until fluffy. Gradually beat the cooled cream into it until a smooth and airy filling forms.
  • Filling: Transfer the cream into a piping bag and fill each roll with it. You can decorate with powdered sugar, chocolate, or leave them as they are.
