  • Preparation of the dough: Peel the potatoes and onion and grate finely. Mix and let stand until the potatoes release their juice. The juice needs to be removed. Grate the carrot finely and add to the potatoes. Add the crushed garlic, salt, pepper and mix well. Add the egg, 2 tablespoons of flour and mix again. Fry pancakes from the dough in hot oil until golden.
  • Filling preparation: Cut the chicken breasts into cubes. Stir-fry them in hot oil while stirring constantly. Season with salt to taste, add dried garlic and curry seasoning. Fry until tender. In a skillet heat oil and a piece of butter. Add the chopped onion and sauté. Clean the mushrooms and cut into small pieces. Add to the onion and simmer until soft. Lightly salt and pepper. Pour in the cream and stir until the mixture thickens. Add the mushroom mixture to the fried chicken breasts. Finally add the finely chopped green onion and mix.
  • Finishing the pancake: Grate the mozzarella finely. On half of the cooked pancake spread the chicken mixture, sprinkle with grated mozzarella. Fold the pancake in half and place it on a baking sheet lined with parchment paper. Sprinkle the top again with mozzarella. Bake in a preheated oven at 180°C for about 5 minutes, until the cheese melts and browns. Before serving sprinkle with finely chopped green onion. Serve hot and crispy!
