Preparation procedure

  • Dough: Whisk the eggs, a pinch of salt and the sugar until pale and frothy. Fold in the sifted flour with the baking powder and the chopped nuts. Spread the batter on a baking tray (23 × 23 cm) lined with parchment paper. Bake at 180 °C for 25–30 minutes. Let cool and slice into two halves.
  • Cooked custard: Whisk the eggs with the sugar, vanilla sugar and flour. Pour in the milk and, stirring constantly, cook until the custard thickens. Remove from heat, cover with plastic wrap and let cool.
  • Caramel: Caramelize the sugar in a pan. Add the cream and butter, mix and let cool.
  • Combining the cream: Whip the butter until fluffy and gradually beat in the cooled custard and caramel. This will create a smooth caramel cream.
  • Assembling the slice: Spread the caramel cream on the bottom layer of the cake, place the second layer on top (bottom side up) and spread the sides as well. Chill in the refrigerator for 4 hours.
  • Caramelized nuts: Melt the sugar in a dry pan, add the nuts and stir for about 6 minutes until they are coated in caramel. Spread them on parchment paper and let cool.
  • Finishing cream: Whip the cream with the sugar and mascarpone into a firm cream. Spread it over the top of the pastry and sprinkle with chopped caramelized nuts.
