Preparation procedure

  • From the all-purpose flour, baking powder, sugar, butter and eggs, knead a smooth dough. Wrap it in plastic wrap and let it rest in the refrigerator for at least 20 minutes.
  • Coarsely grate the apples. Put them into a pan, add the butter and sugar and briefly stew them until they soften and release their juice. After they have cooled slightly, stir in the jam and ground cinnamon.
  • Mix the corn starch and sugar into about 200 ml of milk until smooth and free of lumps. Bring the remaining milk to a boil, pour in the starch mixture and, stirring constantly, cook until a thick cream forms. Remove from heat and stir in the grated coconut.
  • Preheat the oven to 175 °C. Divide the dough into two parts. Roll out one part and transfer it to a baking pan lined with parchment paper. Prick the bottom with a fork and sprinkle semolina over it to absorb excess juice.
  • Evenly spread the apple filling over the dough, layer the coconut cream on top and smooth the surface.
  • Roll out the second part of the dough, place it over the cream, lightly prick the surface again with a fork and put it in the oven. Bake for about 35 minutes, until the top is lightly golden.
  • Let the baked cake cool completely. Before serving you can lightly dust it with powdered sugar.
