Preparation procedure

  • Preparation of the base: In a bowl, mix the plain flour with the baking powder. Add the butter or margarine, breaking it into small pieces. Stir in the powdered and vanilla sugar, the egg yolks and the sour cream. Work the dough, wrap it in cling film and place it in the refrigerator for 30 minutes.
  • Preparing the filling: Whip the egg whites into stiff peaks. Mash the cottage cheese and mix it with the powdered sugar, raisins, egg yolks, semolina and lemon zest. Gradually fold in the whipped egg whites and gently mix.
  • Baking: Preheat the oven to 160 °C. Roll out the dough and place it into a pan (25 × 30 cm), prick with a fork and bake for 10–15 minutes. After baking, spread the base with peach jam and add the cottage cheese filling. Return to the oven, reduce the temperature to 140 °C and bake for another 10 minutes.
  • Preparing the meringue and finishing: Whip the egg whites and sugar into a very stiff meringue and spread it evenly over the top of the cake. Reduce the temperature to 120 °C and bake for another 20 minutes, until the meringue turns golden and dries.
  • Cooling: After baking, let the cake cool in a cool place so that sugar droplets form on the surface.
