Coconut temptation with cream is a delicious dessert that combines a delicate cocoa dough, a fluffy coconut layer and a rich vanilla cream, which makes it disappear from the tray before you can even grab a plate. Preparation procedure

  • Cream the butter with the sugar until fluffy. Add the cocoa, the flour mixed with the baking powder, and the sour cream. Work into a smooth, soft dough. Divide it into two equal parts.
  • Roll out one part of the dough and transfer it to a baking sheet lined with parchment paper. Smooth the dough evenly.
  • Whisk the egg whites with the sugar into stiff peaks. Gently fold in the grated coconut and spread the mixture evenly over the dough.
  • Roll out the second part of the dough and carefully place it on the coconut layer. Bake in a preheated oven at 180 °C for about 15 minutes. After baking, let it cool completely.
  • From the milk, sugar and pudding powders, cook a thick pudding. Let it cool while stirring constantly. Whip the cream until stiff and gently fold it into the pudding. Spread the cream evenly over the cooled base.
  • Melt the chocolate with the butter in a bain-marie, spread it over the cream and immediately sprinkle with grated coconut.
  • Chill the dessert in the refrigerator for at least 2 hours, ideally overnight, so that the creams and the glaze set.

Tips for best results

  • The dough should be soft but not sticky – adjust the amount of sour cream as needed

  • Apply the cream only to a completely cooled base

  • The cake is best sliced the next day, when it is perfectly set
