Preparation procedure

  • Preparing the dough In a bowl, mix the flour, sugar, coconut, softened butter and rendered lard. Work into a smooth dough. If it is too crumbly, knead it briefly with your hands until it holds together. Let rest at room temperature for 10 minutes.
  • Cutting out Roll the dough between plastic bags to a thickness of about 4 mm. Cut out circles (diameter 5–6 cm) and place them on a baking sheet lined with parchment paper.
  • Baking Bake in an oven preheated to 180 °C for 6 minutes, until the edges of the cakes acquire a light pink tint. Let cool.
  • Preparing the cream Whisk the eggs with the sugar over a double boiler for about 10 minutes, until the mixture lightens and thickens. Remove from the steam and continue whisking for another 5 minutes until cooled. Gradually beat in the softened butter until a smooth cream forms.
  • Assembling the cakes Assemble three dough circles together each with filling (in the center). Roll the sides of the cakes in coconut. Place a piece of chocolate on top, which after a moment sprinkle with coconut.
  • Chilling Cover the cakes with plastic wrap and leave in the refrigerator for at least 20 minutes for the cream to set.
