Preparation procedure

  • Batter preparation – First separate the egg whites and yolks. Whip the egg whites into stiff peaks. In another bowl, beat the yolks with the brown sugar until creamy. Then add the flour, cocoa powder and water. Mix everything thoroughly. Finally, gently fold in the whipped egg whites to preserve the airy structure of the batter.
  • Baking the batter – Pour the batter into a greased pan and bake in a preheated oven at 180 °C for 30 minutes, or until the cake is firm to the touch. After baking, let the cake layer cool.
  • Preparing the cream – In a small bowl, mix the cocoa powder, instant coffee and sugar. Add the milk and mix well. Then whip the cream and fold it into the cocoa mixture to create a smooth chocolate mousse. Finally add the whipped cream stabilizers and gently mix.
  • Assembling the cake – Spread the prepared cream evenly over the cooled cake layer.
  • Decoration – In a small bowl, whip 2 dl of whipping cream and spread it on top of the cake. Sprinkle with grated chocolate and let chill in the refrigerator.
