Preparation procedure

  • Preparing the batter: In a bowl mix grated carrot, flour, milk, yolks, granulated and vanilla sugar, baking powder, cinnamon and chopped nuts. Mix thoroughly.
  • Beating the egg whites: In another bowl beat the egg whites until stiff peaks form.
  • Combining the mixtures: Gently fold the beaten egg whites into the carrot mixture so that the batter remains airy.
  • Baking: Pour the batter onto a greased and floured baking tray. Bake in a preheated oven at 180 °C for about 35 minutes, until the cake is golden and cooked through.
  • Preparing the cream: In a bowl mix the sour cream, quark, vanilla sugar, lemon zest and juice. Whip everything into a smooth cream.
  • Finishing: Evenly spread the prepared cream over the cooled cake and sprinkle with chopped nuts. Let the cake set in the refrigerator for several hours, ideally overnight.
