Preparation procedure

  • Prepare the batter: Separate the egg whites from the yolks. Whip the egg whites with a pinch of salt into stiff peaks. Beat the yolks with the powdered sugar until thick and foamy. Gradually add the oil, then alternately the flour mixed with the baking powder and the milk or water. Finally, gently fold in the beaten egg whites.
  • Quark filling: Mix the quark with the sugar, egg, pudding powder and a little milk. Whisk everything into a smooth mixture.
  • Assembling the sponge cake: Grease the baking pan with butter and dust with flour. Pour in the batter, spread the blueberries and spoon the quark mixture among them.
  • Baking: Bake in a preheated oven at 180 °C for approximately 30–40 minutes, until the surface turns golden. To be sure, perform the skewer test – the batter must not stick.
