Ingredients

For the sponge:

6 eggs
6 tablespoons sugar
5 tablespoons all-purpose flour
1 tablespoon unsweetened cocoa
1 teaspoon baking powder

For the cream:

1 package vanilla pudding
2.5 dl cherry juice
1 dl water
250 g butter
200 g powdered sugar
cherries to taste (canned or fresh)

For the top layer:

3 packages whipping cream (min. 33 %)
whipped cream stabilizer as needed

Preparation procedure

Prepare the sponge Separate the egg whites from the yolks. Beat the yolks with the sugar until light and frothy. Add the flour mixed with the cocoa and baking powder. Finally, gently fold in the stiffly beaten egg whites. Pour the batter onto a baking tray lined with parchment paper (approx. 30 × 35 cm) and bake at 170 °C for about 20 minutes. Let cool.
Make the cream Prepare the vanilla pudding from the cherry juice and water. Cook according to the instructions until a thick pudding forms. Let it cool. Meanwhile, beat the butter with the powdered sugar until fluffy and gradually mix in the cold pudding. Finally, add the cherries.
Assembling the dessert Spread the cherry cream evenly over the cooled sponge.
Top layer Whip the cream with the stabilizer until stiff. Spread it over the cream and smooth. You can decorate the surface with cherries or chocolate shavings.
Let it set Place the finished dessert in the refrigerator for at least 6 hours (ideally overnight) so it firms up nicely and the flavors meld.
