Preparation procedure

  • Preparation of the cocoa sponge Mix all the dough ingredients and work into a smooth dough. Divide it into two halves and roll each into a thin sheet. Transfer to a baking tray greased with fat and bake in a preheated oven at 180 °C for 15–20 minutes. Let cool.
  • Preparing the cream In a saucepan, cook a thick mixture from the milk and plain flour and let it cool completely. In a bowl, beat the butter with the powdered sugar and then gradually mix in the cooled mixture. You will get a smooth and fluffy cream.
  • Assembling the dessert Evenly spread half of the strong coffee mixed with milk and a little rum over the bottom baked sheet. Then spread all of the cream and cover with the second sheet of dough. Also sprinkle that one with the coffee mixture.
  • Chocolate glaze Heat the cream in a bain-marie or in a saucepan and let the dark chocolate melt in it. Stir until smooth and pour the still-warm glaze over the entire surface of the dessert.
  • Resting Place the dessert in the refrigerator and let it rest ideally until the next day. The base will become nicely tender, the flavors will meld, and the dessert will have a perfect consistency.
