Preparation procedure

  • Wash the beets well, peel them and place them in a pot of water. Cook for approximately 40 minutes, until they are soft and easily pierced with a fork. After cooking, let the beets cool.
  • Meanwhile wash the apple, remove the core and cut it into small sticks or coarsely grate it. Peel the celeriac and carrot and grate them as well. This combination will add freshness and crunch to the salad.
  • Peel the cooled beets and cut into cubes or sticks according to preference. A homemade irregular cut gives the salad a distinctive character.
  • In a bowl, mix the beets with the apple, celeriac, carrot and finely chopped garlic. Prepare the dressing from apple cider vinegar and olive oil, salt and pepper to taste and mix everything well so the flavors combine.
  • Sprinkle the salad with coarsely chopped walnuts, which will give it a pleasant crunch and a delicious nutty flavor.
  • If you want to mellow the salad, you can serve it with a spoonful of plain yogurt or sour cream. Garnish with mint or parsley and serve chilled or at room temperature.
