Preparation procedure
- Preheat the oven to 130 °C.
- Pour 3 cups of water into a deep roasting pan.
- In a bowl, mix the salt, sugar, mustard and the other spices.
- Stir and rub the mixture all over the brisket.
- Place it on a baking rack and insert a meat thermometer into the meat.
- Place the rack into the pan with water, cover the entire pan with aluminum foil and let it cook.
- Bake in the oven until the internal temperature of the meat reaches approximately 75 °C.
- Then remove the foil and continue baking until the internal temperature of the meat is approximately 84 °C.
- This roasting is really slow and can take around 5 to 6 hours.
- Take the brisket out of the oven and let it rest for 20 minutes before serving.
