  • Clean the cabbage and cut it into thin strips. In a large pot heat the lard or oil, add the finely chopped onion and sauté until golden. Add the cabbage, stir briefly, add a little water and simmer over low heat for about 10–15 minutes until semi-tender. Then add the pressed garlic, salt, pepper and – if you want – add a pinch of crushed caraway. Finally sprinkle a little plain flour and cook briefly more so a delicate sauce forms.
  • Cut the smoked meats and bacon into cubes. You can briefly fry them in a pan to release the aroma and fat, but it is not necessary. Peel the potatoes, cut into medium cubes and cook in salted water until tender (about 10–12 minutes), then drain them.
  • Put a layer of cooked potatoes into a larger baking dish, add half of the stewed cabbage with smoked meat on top. Repeat the layering once more, or finish with a layer of potatoes. If you want the dish to be smoother and more compact, you can pour the mixture before baking with sour cream mixed with a little milk or with whipping cream.
  • Place the baking dish into an oven preheated to 180–200 °C and bake for 10–15 minutes, until the surface lighty browns and all the flavors meld well.
