Pork ribs baked in beer are among those dishes that smell wonderful already during preparation and turn the kitchen into a small home bistro while baking. Thanks to slow roasting at a low temperature, the meat is incredibly tender, juicy and full of flavor, while the onions and beer create a natural sauce with a subtle caramel base. This recipe is ideal for a weekend lunch, a family gathering or an evening with friends.

Preparation procedure

  • Preheat the oven to 160 °C. In a bowl, mix the mustard, brown sugar, smoked paprika, salt, pepper and pressed garlic. You will get a thick, aromatic marinade that will give the ribs a pronounced flavor and color.
  • Coat the ribs with the marinade on all sides. If you have time, let them rest in the fridge for at least 30 minutes — the flavor will be even more intense.
  • Lightly grease a roasting pan with oil and spread the onion, cut into rings, over the bottom. Place the ribs on the onion and pour the beer over them.
  • Cover the roasting pan with foil and put it in the oven. Bake for 1 hour and 30 minutes. Then remove the foil, reduce the temperature to 140 °C and bake for another 1 hour so the meat can set nicely and the surface can lightly caramelize. During baking, occasionally baste the meat with the drippings.
  • The finished ribs are so tender that the meat easily separates from the bone. For safe consumption, they should have an internal temperature of at least 70 °C.
  • After removing from the oven, let the meat rest for 5 minutes. Serve it with the roasted onions and drippings, and optionally drizzle lightly with honey. Sprinkle with fresh herbs.
