Preparation procedure

  • Peel the apples, remove the cores and cut into thin slices or small cubes. Melt the butter in a non-stick pan and sauté the apples over medium heat together with half the sugar and the cinnamon for about 5–7 minutes, until they soften and lightly caramelize. Then set them aside.
  • In a bowl, whisk the eggs with the milk, remaining sugar, salt and, if using, the vanilla extract. The mixture should be pale and slightly airy.
  • Lightly grease the pan again with butter and heat it. Pour in the egg mixture and let it set slowly. Once the bottom begins to firm up, arrange the prepared apples on top.
  • Cover the pan with a lid and finish cooking the omelette over low heat for another 3–5 minutes, until the top is set as well. The steam will keep the omelette nicely fluffy.
