  • Preparation of the apples: First peel and grate the apples on a coarse grater. Put them into a pot, add sugar, butter and cinnamon. Cook them over low heat until they release juice. Once the juice forms, strain it and let it cool. Stir the cornstarch into the juice and, stirring constantly, add it back to the apples. Cook until a thick apple purée forms.
  • Preparation of the dough: Preheat the oven to 180 °C. In a bowl, beat the butter with the sugar and a pinch of salt until frothy, add the yolks and vanilla extract. Then stir in the yogurt, baking powder and baking soda. Finally gradually add the flour until a firmer dough forms.
  • Par-baking the dough: Grease a baking sheet (approx. 23 x 40 cm) with butter and spread the prepared dough over the bottom. Par-bake in the preheated oven for about 25 minutes.
  • Preparing the meringue: Meanwhile whip the egg whites with a pinch of salt into stiff peaks. Gradually add the powdered sugar, lemon juice and vanilla sugar. Whip until the meringue is firm.
  • Assembling the cake: After pre-baking the dough, spread the warm apple filling over it evenly. Return the baking sheet to the oven and bake for another 10 minutes. Then spread the meringue over the apple filling and smooth it evenly. You can create patterns on the meringue with a fork. Bake the cake for another 10 minutes.
  • Finishing: After baking, let the cake cool completely and cut into portions.
