This peach cake is an ideal choice if you are looking for a simple and quick dessert. Juicy peaches and a delicate vanilla-flavored cream will surely enchant you. Bake it every week like we do – you won’t regret it!

Preparation procedure

  • Preparation of the batter: Whisk the eggs with the sugar and vanilla sugar until foamy. Pour in the oil and mix. Then add the flour mixed with the baking powder and mix again. Pour the batter onto a baking tray lined with baking paper and bake in a preheated oven at 170 °C for approximately 15–20 minutes, until the surface turns golden. After baking, let the base cool and remove the baking paper.
  • Preparation of the filling: Drain the peaches, pat dry and cut into small cubes. Reserve the peach juice.
  • Cream: Mix the milk with the whipping cream, add the whipped cream powder and whip into a stiff cream. Fold the chopped peaches into the cream.
  • Assembling the cake: Drizzle the cooled base with peach juice. Spread the prepared cream evenly over it and smooth. Sprinkle the surface of the cake with grated white chocolate. Put the cake in the refrigerator for several hours, ideally overnight.

Total preparation time:

  • Active preparation: 30 minutes
  • Baking: 20 minutes
  • Cooling: 6 hours or overnight

Number of servings:

Tip: If you use fresh peaches, simply peel them, cut them and drizzle with a little lemon juice to prevent browning.
