Preparation procedure

  • Cream: In a pot mix the yolks, sugar, flour, vanilla sugar and milk. Stir thoroughly and bring to a boil
  • Then remove from the heat and continue stirring and let cool
  • Add the butter cut into pieces to the mixture
  • Mix everything with a mixer until smooth.
  • Dough: Whip the egg whites into a stiff foam. Add the sugar during whipping so you get a glossy meringue.
  • Add the flour, nuts and gently fold into a homogeneous batter.
  • Place it into a pan
  • Bake in the oven for 20 minutes at 170 degrees
  • Melt the sugar in a pan, caramelize it and pour onto baking paper. Let cool
  • Cover the caramel with another sheet of paper and crush with a rolling pin into small pieces but not into powder.
  • Whipped cream: Whip the cream until stiff
  • Then mix it with the caramelized sugar and chopped nuts
  • Spread the cake layer with the cream and whipped cream and repeat the process with the two remaining layers.
  • Decorate with crushed caramel and chopped nuts.
