Preparation procedure

  • Preparing the starter: In 50 ml lukewarm milk, stir in a teaspoon of powdered sugar and the dry yeast. Cover and leave in a warm place until the starter rises (approx. 10 minutes).
  • Preparing the dough: Cut the butter into smaller pieces and let it soften. Sift the flour into a bowl, add the salt, sugar, softened butter, egg and the prepared starter. Work into a smooth, non-sticky dough by hand or with a mixer. Divide the dough into two parts, wrap in plastic wrap and place in the fridge for 40 minutes.
  • Preparing the fillings: Heat the sugar with the water in a saucepan and bring to a boil to form a syrup. In a bowl mix the poppy seeds with lemon zest, cinnamon and 2 tablespoons of plum jam. Add the syrup so that a thick filling forms. In another bowl mix the walnuts with lemon zest, cinnamon and optionally apricot jam. Thicken with syrup as needed.
  • Filling and shaping: Take the dough out of the fridge and roll it out into a thin sheet. Evenly spread the filling (poppy seed or nuts) and carefully roll into the shape of a strudel. Place on a baking sheet lined with parchment paper. Brush with beaten egg.
  • Baking: Bake in a preheated oven at 180 °C for about 25 minutes, until the strudel is golden. After baking let cool, cover with a cloth and then slice.
