Preparation procedure

  • Preparing the starter: In 50 ml of milk dissolve a teaspoon of powdered sugar and add the yeast. Stir, cover and let the starter rise.
  • Preparing the dough: Cut the softened butter into cubes. In a bowl mix the flour, salt, sugar, egg, the prepared starter and the butter. Work into a smooth, non-sticky dough. Divide the dough into two pieces, wrap in cling film and let rest in the refrigerator for 40 minutes.
  • Preparing the filling: In a saucepan, cook the sugar with the water into a sugar syrup. In one bowl mix the ground poppy seeds with the lemon zest, cinnamon and two tablespoons of plum jam. Add a little sugar syrup to form a thick filling. In another bowl mix the walnuts with lemon zest, cinnamon and, if desired, apricot jam. Add sugar syrup as needed.
  • Filling and shaping: Take the dough out of the refrigerator and roll it out into a very thin sheet. Spread the filling evenly, then roll the dough into a strudel. Transfer the finished strudel to a baking tray lined with parchment paper and brush with beaten egg.
  • Baking: Bake in a preheated oven at 180 °C for about 25 minutes, until the surface turns golden.
  • Serving: After baking, let the strudel cool, cover with a cloth and slice. This strudel is tender, moist and full of delicious filling.
