Preparation procedure

  • Preheat the oven to 180 °C. Separate the eggs into whites and yolks. Whip the whites into stiff peaks. Beat the yolks with the sugar until pale and fluffy, then fold in the medium-ground flour mixed with the baking powder. Finally, gently fold in the meringue. Spread the batter into a baking tray lined with parchment paper and bake for approximately 25 minutes until golden. After baking, let it cool completely.
  • Cut the cooled sponge cake horizontally into two layers. Leave the bottom half whole, crumble the top half into smaller pieces. Drizzle them with milk to soften. Add the chopped sour cherries or cherries, walnuts, cocoa and sugar. Mix everything thoroughly until you obtain a thick but easily spreadable mixture.
  • Spread a layer of jam evenly over the bottom part of the sponge. Spread the prepared sponge cream over the jam and smooth the surface.
  • Whip the cream with the stabilizer to a firm consistency. Spread it evenly over the top of the dessert.
  • Chill the dessert in the refrigerator for at least 1 hour, ideally longer so the layers set well. Then cut into slices or squares.
