Preparation procedure

  • Meat marinade: Mix salt, pepper, garlic powder, coriander and rosemary. Coat the pork tenderloin with this mixture. Wrap the tenderloin in foil and let it rest in the refrigerator for 1 hour.
  • Preparation of the onions and garlic: Heat oil in a pan and sauté the onions and garlic until golden.
  • Preparing the roll: Sear the tenderloin in a hot pan with oil on all sides for about 3-4 minutes. Roll out the puff pastry to a thickness of 2-3 mm. Place the bacon slices on the dough and put the seared tenderloin in the center. Spread the sautéed onions and grated cheese over the tenderloin. Carefully fold the edges of the bacon over the tenderloin and wrap it in the dough. Press the seams well so the juices from the tenderloin do not leak. Transfer the wrapped tenderloin to a baking sheet lined with parchment paper. Brush with the yolk beaten with milk and sprinkle with sesame seeds. Bake in a preheated oven at 200°C for about 40-55 minutes, until the pastry is golden and crispy.
  • Preparing the vegetable side dish: Heat oil in a pan and sauté the carrot. Then add the chopped potatoes, stir and add the zucchini. Add 100 ml of water and stir. In another pan, sauté the onion with the chopped bell pepper and tomatoes. Salt, add paprika, sugar and black pepper. Add the tomato paste, crush 2 cloves of garlic, add 50 ml of water and simmer until tender. Mix the stewed vegetables with the prepared tomato mixture and simmer for about 10 minutes.
  • Serving: Slice the baked roll and serve with the stewed vegetables. Before serving, sprinkle with fresh dill.
