10-minute flatbreads as a bread substitute
What we will need:
150 g oat flakes
125 g sour cream
3 eggs
leaves of fresh celery
Salt to taste
Preparation method: Mix the oat flakes with sour cream, eggs, salt and a teaspoon of chopped celery leaves (you can replace with parsley). Mix into a uniform batter from which you form individual flatbreads. Fry the flatbreads on a dry pan on both sides.
Poppy seed cake made from oat flakes
7-minute sprinkled poppy seed cake: No dough and no flour, just pour onto the baking sheet and you don’t have to worry about anything else!
What we will need:
1 cup ground nuts
1 cup ground oat flakes
2 cups ground poppy seeds
3 tablespoons cane sugar
7 apples coarsely grated
3 tablespoons butter
a baking pan with a diameter of 28 cm
Preparation: Mix all dry ingredients in a bowl. Grease the baking tray with butter. Sprinkle a thin layer of the dry mixture on the bottom, continue with a layer of apples, the dry mixture and apples – the resulting cake should consist of 5 layers of dry mixture and 3 layers of apples. Place slices of butter on top and put into a preheated oven. Bake at 200 degrees for 45 minutes. The top can be drizzled with chocolate glaze or honey.
Healthy pancakes from oat flakes

What we’ll need (for 4 pcs):
150 g oat flakes
2 egg whites (you can use whole eggs too, I use only the whites)
200 ml milk
honey or other sweeteners to taste
a pinch of salt
Preparation: Simply put all ingredients into a blender and blend into a smooth mixture. The batter should have a consistency like classic pancake batter. Adjust by adding more flakes or milk as needed.
Then simply portion the batter onto a heated pan so that you form thinner pancakes. Fry on both sides until golden and serve with the toppings you like!

What we will need:
250 g quark (curd cheese)
3 eggs
3 tablespoons oat flour (or flakes ground finely)
3 tablespoons oat flakes
1 teaspoon salt
150 g reduced-fat cheese
Preparation: Mix all ingredients except the cheese in a bowl and let rest for 5 minutes. Spoon the mixture by teaspoons and place the portions onto a baking sheet lined with parchment paper. Sprinkle with grated cheese and put into a preheated oven, where you bake until the cheese on the surface is golden.
Healthy muffins from oat flakes
What we will need:
3 cups oat flakes
3-4 tablespoons honey
¾ cup applesauce
1½ cups milk
2 eggs
2 teaspoons vanilla extract (can be replaced with vanilla sugar)
1 teaspoon ground cinnamon
½ teaspoon salt
2 teaspoons baking soda
oil or butter to grease the muffin tin
For topping:
blueberries
chocolate shavings
seeds
nuts
Preparation: Set the oven to 175 degrees and grease the muffin tin with butter or oil. In a bowl whisk the honey with the eggs. Then add applesauce, milk, vanilla, salt and cinnamon to the mixture. Gradually add and fold in the oat flakes together with the baking soda. Mix well and let rest for 20 minutes. Then fill each muffin cup to 3/4 with batter and sprinkle as desired (nuts, chocolate, blueberries ..). Bake for 30 minutes, or until the surface of the muffins is golden.
Delicious broccoli patties with oat flakes
What we will need:
1 medium-sized broccoli
2 eggs
4 tablespoons oat flakes
2 tablespoons wholegrain breadcrumbs
1 tablespoon sesame seeds
2 tablespoons pumpkin seeds
2 tablespoons sunflower seeds
1 bunch of parsley
Salt and pepper to taste
Preparation: Wash the broccoli, divide into smaller pieces and very briefly boil in salted water (or blanch) so that the broccoli softens a little. Then immediately pour cold water over it to stop the cooking process. Mix the seeds and dry-roast them in a pan. Transfer the broccoli to a blender and blend. In a bowl mix the blended broccoli, chopped parsley, eggs, oat flakes, seeds, salt and pepper. Finally mix in the breadcrumbs so that you get a good consistency for shaping the patties. From the mixture form individual patties, which you fry in olive oil on both sides until golden. Alternatively you can choose a baked version. Place the patties on a baking sheet lined with parchment paper, brush with olive oil and bake until golden at 180-190 degrees.
Turn the patties during baking so they become crispy on the other side as well.
