Cucumber salad
Slice 1 cucumber and season with a little salt and pepper. Add 1 cup of plain yogurt and sprinkle with finely chopped spring onion.
Cucumber smoothie
Chop 1 cucumber, including 1 chopped green apple, a handful of crisp spinach and 1 cm of fresh ginger – blend together and drink just before lunch.
