Preparing blackcurrant leaves

Only the middle leaves are harvested. Dry them in a single layer in a well-ventilated room, then store in a linen or paper bag.

The best way to process currants: Juice full of vitamins

For preparing the juice we need:

  • 1-1.5 kg of blackcurrant
  • 10 g of citric acid
  • about 1 liter of boiled cooled water (max 1.5 l)
  • cane sugar

Procedure:

  • Wash and clean the fruit well.
  • Then transfer to a bowl and puree with an immersion blender.
  • Add water, mix and transfer to sealable jars.
  • Place in the refrigerator and let stand 1-2 days in the fridge.

After this time add sugar – the original recipe states 1 kg of sugar per 1 liter of juice, but that seemed too much to me – I used about 600 g of cane sugar for the whole batch and it seems just right – taste to your liking. Mix well so that the sugar dissolves. Then fill into clean jars (I disinfected them with a little alcohol – especially the lids.

Store in the fridge and use as needed. If you want your cold-pressed juice to last several months, add a preservative that is added cold.
