Apple season is starting, the first summer varieties are just ripening, which of course will be followed by others until the first frosts. And how to use the vitamins from the abundant harvest? Besides healthy fresh apples, compotes or purees, bake an excellent upside-down apple cake from the apples, which will be suitable for an afternoon snack, but also for coffee or with plain yogurt for breakfast. This apple cake tastes wonderful, smells beautifully of late summer, and moreover is exceptionally juicy!
Apple cake according to a traditional German recipe
Here, as in Germany, apples are a traditional fruit of late summer and autumn. With good storage, so-called winter apples used to last until spring. And what did housewives prepare for their families? One of the traditional recipes is this for a juicy upside-down cake. What will you need to prepare this dessert in a skillet?
Ingredients
To prepare an upside-down cake in a skillet, first prepare a skillet that can go into the oven; cast iron is ideal. You will also need for the cake:
- 4 large apples,
- 1 tablespoon granulated sugar,
- 2 tablespoons butter,
- ½ cup flour,
- ¼ cup raw cane sugar,
- 2 eggs,
- 2/3 cup of milk and sour cream in a 1:1 ratio,
- 1 teaspoon lime juice,
- 1 teaspoon vanilla extract,
- ½ teaspoon ground cinnamon,
- powdered sugar for decoration.
Preparation
Prepare the apples: wash them thoroughly, peel off the skins, cut them in half and then into thin slices (half-moons).
Prepare a deep bowl in which you mix the flour and granulated sugar, add a pinch of salt and mix well.
In another bowl, mix 2 eggs with the mixture of milk and sour cream, mix thoroughly and add the vanilla essence. Stir the batter until it is completely smooth.
At this point, add the prepared flour and sugar mixture to the batter. Stir carefully with a whisk for about a minute.
Now move to the stove and preheat the skillet over low heat so it is ready for melting the butter.
Melt the prepared butter and add the apples, raw cane sugar and ground cinnamon to the skillet as well. Sauté over low heat until golden brown, which takes approximately 10 minutes. Be careful not to burn the apples.
The next step must be done quickly; it is also necessary to have the oven preheated to 220 °C.
Now pour the batter over the apples and immediately place the skillet into the heated oven, baking for another about 15–20 minutes, until the edges of the cake are perfectly golden brown.
After removing from the oven, carefully turn the skillet upside down and unmold the cake onto a prepared plate. After cooling, dust with powdered sugar and cut into triangles. You can decorate with freshly whipped cream and serve with coffee or tea.
