Summer is the time of ripening tasty fruit. If you have a garden, surely your first strawberries are already growing and cherries will appear soon. Harvests, however, are usually plentiful and you won’t use it all at once. So how can you make suitable use of it so it lasts until winter? Try this easy canning; it’s not rocket science and the fruit will stay tasty and refreshing for a long time.

How to do effective and successful canning?

Although it is a simple procedure, canning also has its rules that should be observed. The basic thing is to have well-washed fruit. So fill the sink with plenty of water and let the fruit soak in it for a while. When you soak cherries, you will also wash away worms along with the dirt.

Choosing jars

In the meantime take all the jars and sterilize them well. This is crucial so that you remove all impurities that could complicate the canning and cause the fruit to spoil quickly. Even the tiniest dirt can cause mold growth. Therefore focus on ensuring the jars are perfectly clean before you put the fruit into them.

What next?

Then remove the stems from the fruit and inspect them thoroughly to discard any fruits that are moldy or bruised. Fill the sterilized jars and then sprinkle a tablespoon of sugar on top, which will help preservation. Also put a teaspoon of citric acid into each jar – thanks to it the fruit will retain a nice color.

Pour water over the contents of the jars, close them tightly, place them in a suitable, sufficiently large pot, fill it with water and bring the contents of the jars to a boil. Then reduce the heat and cook for about twenty minutes. Afterwards let them cool, and tighten the lids once more.

And you’re done

Once you have canned, simply store the jars in a dry and dark place. You can use the preserved fruit throughout the winter. However, whenever you open a jar, store it in the fridge and consume it within a few days. If mold appears on the lid, it is because the jar was not sealed properly. Preferably throw such a jar away.
