Lemon balm is known for its ability to calm body and mind and promote quality sleep. This lemon balm syrup is great not only as a sweetener for tea, but also for homemade lemonades and desserts. Try it before bedtime and you’re guaranteed an undisturbed night.
Health effects of lemon balm:
- Acts antibacterial and antiseptic

Ingredients (approx. 1.5 liters of syrup):
- Leaves from 30–35 longer stems of lemon balm
- 750 g granulated or cane sugar
- 20 g citric acid
- 1.75 liters of cold boiled water
Procedure:

Preparing the leaves
Separate the lemon balm leaves from the stems and place them in cold boiled water. Leave the container with the leaves to steep in a cool place for 2 days. -
Cooking the syrup
After two days, strain the infusion and pour the liquid into a pot. Add the sugar and citric acid and bring the mixture to a boil. Once it starts boiling, boil for another 5 minutes. -
Filling the bottles
Let the syrup cool for a while, then pour it into clean jars or bottles. Store in the refrigerator.
Usage:
You can add this lemon balm syrup to tea, lemonades or desserts as a natural sweetener. Before bedtime, add a teaspoon of the syrup to your tea – lemon balm will help you fall asleep faster and sleep peacefully.
