Pickled cucumbers are not the only thing you can prepare from cucumbers for the winter.
You don’t have to spend long hours preparing brine and canning
If you don’t feel like making pickled cucumbers, or you already have enough in stock, we have another way to preserve cucumbers for the winter. Have you ever heard of cucumbers with onions? If not, we’ll explain what it’s about. After reading this article you’ll certainly want to try the recipe.
So what is it and how is it prepared?
Ingredients needed for preparation
- 5 kg pickling cucumbers or slicing cucumbers
- about 5 medium-sized onions
- 8 tablespoons granulated sugar
- 1 tablespoon salt
- 2 dl spirit vinegar
- 1 tablespoon mustard seeds
- 15 peppercorns
- 1 small glass of white wine
- 1 small jar of sodium benzoate
Procedure for preparing cucumbers with onion
In the first step it is very important to wash the cucumbers thoroughly so they do not spoil during storage. Let the cucumbers dry, and if possible, do not peel them. Once the cucumbers are dry, slice them into thin rounds; you can also use a slicer. Place the sliced cucumbers into one large bucket or basin. Add ordinary yellow onions, which you should peel and slice into thin rounds. To the prepared container add the above-mentioned amounts of sugar, salt, vinegar, mustard seeds, pepper, wine and sodium benzoate. Mix everything thoroughly and let it rest.
Cucumbers will release a fairly large amount of juice within a few hours
Fill the cucumbers along with the juice into sterilized preserving jars that have already dried. Fill the cucumbers to the rim of the jars and close them tightly using screw caps or canning lids. The cucumbers do not need to be processed by canning; they will seal themselves. Consume the cucumbers prepared this way as a side dish to cold and hot meals, similar to various types of salads and compotes. In this way you will ensure your body receives vitamins even during the winter.
